Inside the Tren-D store, I spotted a classic (three-circle) Hidden Mickey on the top of a merchandise table inside the entrance doors from the main promenade.

Some of the sunflowers along the lower edge of the smaller sunflower field that's painted on the back wall form classic Mickeys.

When travelling through Mexico on "it's a small world," a pumpkin and two pineapples have been arranged to form a classic Mickey to the right of your boat.

I finally got a decent picture of this old Disney name tag. When you exit the Test Track ride, right past the photo viewing area, there is a set of lockers to the left. It is in the last locker on the right end. Look on the top shelf, in the lap of a white teddy bear. The name tag reads, 'John', and the Mickey image is almost completely worn off, but you can make out his red pants and a shoe.
Jewel of Orleans - Ceiling Hidden Mickey

There is a Hidden Mickey projected onto the ceiling of the Jewel of Orleans, the antique jewelry shop in New Orleans Square. (Thanks to help from Loren Javier.)

In the second window of the second "Environmental Test" office to the right of the ride vehicle, a Mickey Mouse plush doll is sitting with its back against the window.
